Cottage Pie Baked Potatoes
Pierce the 4 large potatoes with a fork and microwave for 8 minutes on high. Turn and microwave for another 8 minutes, or until the potatoes are soft inside. In the meantime, mix all of the remaining ingredients (except the Maizena) in a Medium Classic Roaster and microwave for 10 minutes. Loosen with a fork and add the Maizena mixture and microwave for another 10 minutes.
Remove the top half of each potato and scoop out the flesh. Mash the potato flesh with some milk, margarine, salt and pepper. Half-fill the cavities with the mince and spoon the mashed potato back on top. Arrange the potatoes in a Medium Classic Roaster and bake at 160°C for 20 minutes, or until golden brown on top.
